Joe’s Stone Crab

The Challenge
Joe’s Stone Crab is a Miami Beach institution known for its food and its legendary three-hour wait. For their 100th anniversary, the challenge was to shift the narrative. I needed to move the focus away from the long lines and onto the people who have defined the restaurant's legacy for nearly half a century.

My Role
I was invited to photograph the restaurant and its staff for the commemorative book Waiting At Joe's. I acted as the lead photographer and editorial art director, responsible for capturing the personalities of the lifelong servers and curating a visual narrative that felt as timeless as the institution itself.

Design Decisions

  • With full access to the restaurant over three days, I avoided the standard food shots to focus on the human element, the faces and quiet moments behind the scenes that truly capture their reputation.

  • In both the shooting and the final edit, I prioritized a classic, understated aesthetic. I wanted the photography to feel like a permanent record of the restaurant’s history rather than a trendy editorial piece.

  • I kept the composition clean and impactful. I wanted the images to command attention as soon as a guest picked up the book.


The Outcome
The project successfully reframed the story of Joe's Stone Crab for its centennial. Key results include:

  • One of my photographs was selected for permanent display at the restaurant’s entrance, hanging alongside a Helmut Newton print as a primary visual anchor for every guest who walks in.

  • The project was published in the commemorative book Waiting At Joe's, which is now available in major bookstores nationwide.

  • The work effectively memorialized the 100-year milestone by highlighting the staff and culture behind the scenes, creating a record of the people who maintained the restaurant’s high standards for decades.
